Gather
1-3/4 cups sugar
1 cup water
1/2 cup light corn syrup
1/8 teaspoon cream of tartar
candy thermometer
nonstick cooking spray
metal cookie cutters
food coloring
Go
1. Spray an aluminum baking pan with nonstick cooking spray. Place cookie cutters on sheet.
2. Combine sugar, water, corn syrup and cream of tartar in saucepan.
3. Slowly heat mixture on low heat, stirring constantly until it boils.
4. Measure the temperature until the mixture reaches 300 degrees F.
5. Pour syrup into cookie cutters.
6. Drip food coloring on surface of syrup, then immediately drag a fork across surface to create designs.
7. Let syrup cool and harden.
8. Carefully remove stained glass from cookie cutters and enjoy your colorful candy!

When you boiled your sugar mixture to 300 degrees F, you reached what is called the “hard crack stage” of candy making. The temperature and sugar concentration increases as the water evaporates. Corn syrup keeps the sugar molecules suspended in the solution, and the cream of tartar separates the complex sugar crystals into simpler molecules.
